One of the many advantages of using pressure cookers is that they are an incredibly efficient way to heat food. This is due to their ability to super heat water. Under normal cooking conditions water can only reach a temperature of about 100c because the heat escapes as steam, in a pressure cooker the steam does not escape and they can reach temperatures of about 120c. Cooking times and initial water requirements in a pressure cooker are therefore greatly reduced. |
